Watercress Soup | 西洋菜湯 [Nyonya Cooking]

Nutritious slow-cooked soup is common when having a Chinese meal. This bowl of watercress soup should accompany your next meal. It is an easy and delicious bone broth recipe.

While the trend is going big on bone broth, the Asians have been having such soups or broth since many years back. Using very nutritional ingredients such as goji berries, red dates and others with Chinese medicinal values, these Chinese bone broths are recipes that you need to try in order to appreciate.

Fresh watercress is normally used in this recipe. However, being in Europe, I was unable to get hold of them. I was really lucky to have found dried watercress to cook this soup which I just love.

The ingredients needed are minimal, so that makes preparation very simple. You will need lots of patience though because such soups require at least 1.5 hours for it to slowly simmer so that the taste of the ingredients would be infused together. I prefer to boil these soups for about 2 hours. Trust me, it is worth it. For more natural sweetness, you may add maize or carrot too.
